  • Blanch the green beans in boiling water for 2-3 minutes, then transfer to an ice bath. Pat dry with a kitchen towel or paper towels.

Ingredients
  

  • 1 lb fresh green beans, trimmed
  • 1 large shallot, finely chopped
  • 1/4 sliced almonds
  • 1 tbsp butter (vegan options work)
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp pepper

Instructions
 

  • Blanch the green beans in boiling water for 2-3 minutes, then transfer to an ice bath. Pat dry with a kitchen towel or paper towels.
  • In a skillet over medium heat, melt the butter and brown the sliced almonds until golden. Remove and set aside.
  • In the same skillet, heat the olive oil over medium-high heat. Sauté the shallot and garlic until softened, about 2-3 minutes.
  • Season with salt and pepper. Add the green beans, cooking until heated through, about 3-4 minutes.
  • Transfer to a serving dish and top with the toasted almond slices.
