Asian Roasted Salmon and Broccoli

Ingredients
  

  • 2- 6 oz salmon filets
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1/4 cup coconut aminos or gf soy sauce
  • 2 tsp rice vinegar
  • 2 tsp sesame oil
  • 2 tsp honey, warmed
  • Toasted sesame seeds and green onions for garnish
  • 1 medium head of broccoli, cut into small florets
  • 1/2 tbsp sesame oil
  • 1/2 tbsp coconut oil
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste
  • Red peppers flakes for garnish, optional

Instructions
 

  • Preheat your oven to 400. Combine the coconut aminos, sesame oil, rice vinegar, honey, garlic, and ginger in a small bowl and whisk.Place the salmon in a small bowl for marinading and pour the marinade over the salmon. Marinade for a minimum of ten minutes and up to one hour.While the salmon is marinading, line a sheet pan with parchment paper and lightly spray it with oil.Spread the broccoli out in an even layer. Pour the sesame oil and coconut oil over the broccoli, then sprinkle the garlic powder, salt, and pepper on top. Bake for 20 minutes.Then, remove the broccoli from the oven and push it to one half of the pan.Place the salmon filets on the other half of the pan and bake for an additional 12-14 minutes, until the salmon is cooked through.Serve over your favorite base; I chose forbidden rice. Top it with toasted sesame seeds, green onions, and red pepper flakes. Enjoy 🤍

Can I use a different nut?

The sweet/salty flavor of the pistachios is what really makes this recipe great. I do not recommend using a different nut. If you want to make homemade chicken nuggets, try this recipe.

How do I know when my chicken is done?

I suggest using an instant read thermometer so you know when the chicken reaches an internal temperature of 160 degrees F and you can be sure they are fully cooked.
