Simple DIY Ramen

Equipment

  • 1 large egg, soft boiled

Ingredients
  

  • 1 large egg, soft boiled
  • ½ lb chicken, pan-fried or grilled
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 2 cups chicken broth
  • 2 cups water
  • 2 tbsp coconut aminos or soy sauce
  • 1 carrot, peeled into thick ribbons
  • 1 cup mushrooms, sliced
  • 1 small bok choy, sliced
  • 2 pieces of ramen noodles (We used @lotusfoods millet & brown rice ramen for a gluten-free option)
  • Salt & pepper, to taste
  • Green onion
  • Toasted sesame seeds
  • Red pepper flakes

Instructions
 

  • Soft boil the egg (7-8 minutes), then transfer to ice water.
  • Prep the garlic, ginger, and veggies. Salt and pepper, then cook the chicken and set aside.
  • Heat a pot over medium-high heat. Add sesame oil, garlic, and ginger, stirring until fragrant.
  • Add mushrooms and carrots, cooking until softened.
  • Pour in broth, water, and coconut aminos, bringing to a simmer.
  • Add bok choy and ramen noodles, gently separating the noodles as they cook. Simmer for 3-4 minutes. Salt and pepper to taste.
  • Serve hot, topped with green onion, sesame seeds, half of the soft-boiled egg, and red pepper flakes.

Can I use a different nut?

The sweet/salty flavor of the pistachios is what really makes this recipe great. I do not recommend using a different nut. If you want to make homemade chicken nuggets, try this recipe.

How do I know when my chicken is done?

I suggest using an instant read thermometer so you know when the chicken reaches an internal temperature of 160 degrees F and you can be sure they are fully cooked.

Can I double this recipe?
