Ingredients
  

For the Stir Fry:

  • 1 lb shrimp, peeled and deveined
  • 1 head broccolini, cut into small stems
  • 2 large carrots, peeled and sliced
  • 1 medium red bell pepper, sliced
  • 2 tbsp olive oil, divided

For the Sauce:

  • ½ cup coconut aminos
  • ½ cup chicken bone broth
  • 1 tbsp honey
  • 1 tsp sesame oil
  • 1 tsp rice vinegar
  • 1 tbsp minced ginger
  • 2 cloves garlic, minced
  • 1 tbsp potato starch

Instructions
 

  • Prepare all your ingredients.
  • In a bowl, combine the sauce ingredients and stir until well mixed.
  • Heat 1 tablespoon of olive oil in a pan over medium-high heat.
  • Add shrimp and cook for 2-3 minutes on each side, until they curl and turn opaque.
  • Remove from the pan and set aside.In the same pan, add the remaining olive oil.
  • Stir fry the broccolini, carrots, and bell pepper for 2-3 minutes until tender-crisp.
  • Pour the sauce into the pan with the veggies, stirring frequently until it thickens, about 3-5 minutes.
  • Add the shrimp back into the pan, toss to coat them in the sauce, and serve over rice, pasta, or quinoa.

Notes

For a quick shrimp stir fry, peel and devein shrimp, then stir-fry with colorful veggies like bell peppers, broccoli, and carrots in a simple soy sauce-based sauce. Cook everything on high heat for 10 minutes, and serve over rice or noodles for a complete meal.

The sweet/salty flavor of the pistachios is what really makes this recipe great. I do not recommend using a different nut. If you want to make homemade chicken nuggets, try this recipe.

How do I know when my chicken is done?

I suggest using an instant read thermometer so you know when the chicken reaches an internal temperature of 160 degrees F and you can be sure they are fully cooked.
