Ingredients
- 1 lb chicken breasts
- 1 yellow onion, chopped
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 32 oz low-sodium chicken broth
- 1 cup roasted Anaheim chilies (or two 4 oz cans diced green chilies)
- 1 tsp cumin
- 1 tsp dried oregano
- 1 tsp chili powder
- 1/2 tsp ground coriander
- 1/4 tsp paprika
- 1 tsp sea salt
- 1/4 tsp black pepper
- 8 oz cashew cream cheese or regular cream cheese
- 1 1/2 cups fresh, frozen, or unsalted canned corn
- 2 (15 oz) cans cannellini beans, drained and rinsed
- 2 tbsp fresh lime juice
- 2 tbsp chopped fresh cilantro
- Sliced avocado and lime wedges for serving (optional)
Instructions
- Heat olive oil in a dutch oven over medium heat.Add chicken, onions, and garlic, cooking until the chicken is browned on both sides.Remove the chicken and set aside to cool slightly.Add the broth, chilies, cumin, oregano, chili powder, coriander, paprika, salt, and pepper, stirring to combine. Bring to a boil, then reduce the heat to medium-low and let it simmer.While the soup simmers, puree 1 cup of the beans with 1 cup of broth from the pot in a high-speed blender until smooth. This will make the chili extra creamy!Once the chicken has cooled, cut it into 1-inch pieces and return it to the pot along with the pureed beans, whole beans, cream cheese, and corn. Let it all melt together over medium-low heat, stirring occasionally for about 10 minutes.Stir in the lime juice and cilantro.Serve with avocado slices, lime wedges, and a sprinkle of fresh cilantro.
