Ingredients
For the Stir Fry:
- 1 lb shrimp, peeled and deveined
- 1 head broccolini, cut into small stems
- 2 large carrots, peeled and sliced
- 1 medium red bell pepper, sliced
- 2 tbsp olive oil, divided
For the Sauce:
- ½ cup coconut aminos
- ½ cup chicken bone broth
- 1 tbsp honey
- 1 tsp sesame oil
- 1 tsp rice vinegar
- 1 tbsp minced ginger
- 2 cloves garlic, minced
- 1 tbsp potato starch
Instructions
- Prepare all your ingredients.
- In a bowl, combine the sauce ingredients and stir until well mixed.
- Heat 1 tablespoon of olive oil in a pan over medium-high heat.
- Add shrimp and cook for 2-3 minutes on each side, until they curl and turn opaque.
- Remove from the pan and set aside.In the same pan, add the remaining olive oil.
- Stir fry the broccolini, carrots, and bell pepper for 2-3 minutes until tender-crisp.
- Pour the sauce into the pan with the veggies, stirring frequently until it thickens, about 3-5 minutes.
- Add the shrimp back into the pan, toss to coat them in the sauce, and serve over rice, pasta, or quinoa.
