Shaved Brussels Sprout Salad

Ingredients
  

  • 1 lb Brussels sprouts, rinsed and trimmed
  • Zest of 2 lemons, plus 1/4 cup juice
  • ¼ cup extra virgin olive oil
  • 1-2 tbsp organic miso paste
  • 2 tsp white balsamic vinegar
  • ¼ tsp flaky finishing salt (like Maldon), plus more to taste
  • ½ cup shaved Parmesan
  • Black pepper to taste

Optional:

  • Crushed red pepper flakes, to taste
  • 1/4 cup Toasted almonds, hazelnuts, or pine nuts

Instructions
 

  • Using a knife or mandolin, shave the Brussels sprouts into a large bowl.In a separate bowl, whisk together lemon zest, juice, olive oil, miso paste, black pepper, and white balsamic vinegar until smooth.Just before serving, pour the dressing over the Brussels sprouts. Then, sprinkle with Parmesan, finishing salt, red pepper flakes, and nuts. Enjoy 🤍

Notes

If adding nuts, toast them over medium-low heat, stirring constantly for 3-5 minutes until golden. Remove immediately to prevent overcooking.

The sweet/salty flavor of the pistachios is what really makes this recipe great. I do not recommend using a different nut. If you want to make homemade chicken nuggets, try this recipe.

How do I know when my chicken is done?

I suggest using an instant read thermometer so you know when the chicken reaches an internal temperature of 160 degrees F and you can be sure they are fully cooked.
