Ingredients
  

  • 2 heads romaine lettuce, halved lengthwise
  • 4 tbsp olive oil
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 2 lemons, halved
  • 2 oz fresh Parmesan cheese, grated

Instructions
 

  • Heat your grill to medium-high.Cut each romaine head vertically to make four halves.Halve the lemons.Drizzle 1 tbsp olive oil on each romaine half and rub it in, making sure to coat the entire piece.Place the romaine and lemons face down on the grill. Grill the romaine for 2-3 minutes per side, until lightly charred.Grill the lemons face down the entire time, until caramelized.Remove everything from the grill. Immediately sprinkle each romaine half with 1/4 tsp sea salt and black pepper and top with grated Parmesan.Serve each witha grilled lemon half for squeezing.

The sweet/salty flavor of the pistachios is what really makes this recipe great. I do not recommend using a different nut. If you want to make homemade chicken nuggets, try this recipe.

I suggest using an instant read thermometer so you know when the chicken reaches an internal temperature of 160 degrees F and you can be sure they are fully cooked.
