Ingredients
  

  • 1 lb hot or mild Italian ground sausage
  • 2 tbsp olive oil
  • 1 medium yellow onion, diced
  • 3-4 cloves garlic, minced
  • 6 cups chicken broth
  • 4 cups kale, chopped
  • 2 cups water
  • 4 large yellow potatoes, diced into 1-inch pieces
  • 2 tsp salt
  • 1 tsp black pepper
  • 2 cups heavy cream (plant-based option for a healthier choice)

Optional Toppings:

  • 6 strips bacon, cooked and chopped
  • Parmesan cheese, grated

Instructions
 

  • Heat a large pot over medium-high and brown the sausage. Remove the sausage from the pot and set it aside. Discard excess grease.Add olive oil to the pot, then sauté the onion for about 5 minutes. Add garlic and stir for an additional minute until fragrant.Add potatoes, chicken broth, water, salt, and pepper. Increase heat to high, bring to a boil, then reduce to medium-low and simmer until potatoes are tender, about 10 minutes.Add kale, cream, and sausage back to the pot, simmering for another 5 minutes.Garnish with bacon, Parmesan, and optional red pepper flakes for a spicy kick.

How do I know when my chicken is done?
